Shisanyama — literally 'burn the meat' — grew out of township butcheries that grilled fresh cuts on the pavement for hungry commuters.
It has since become the default South African Saturday: pap, chakalaka, boerewors, and hours of laughter around a drum fire.
The best spots keep it simple — good meat, salt, and time.
